Enjoy a once in a lifetime experience to elegantly dine amid the fire and creation at Ignite Glass Studios. The evening will offer you a sampling of delights from some of Chicago’s best on the culinary scene.
As you arrive, you will be welcomed with an exciting hot glass demonstration with special guests. Your next treat will be from two stars of Embeya Restaurant, which was just named Best New Restaurant of the Year by Esquire Magazine. Delight in a glass inspired special GAS cocktail designed by Danielle Pizzutillo, Beverage Director of Embeya. Pair that combination with creative Hors d'ouvrés created by Chef Thai Dang of Embeya. Embeya is famous for re-tooling the ubiquitous Asian concept based on a range of Asian ingredients, flavors and textures integrated with French technique. You’ll experience the perfect introduction for a memorable evening.
As you move onto dinner, Matthias Merges, chef extraordinaire and owner of Yusho, Billy Sunday’s and newly opened A10 will create an experience beyond compare for those that attend. Inspired by the work of Lifetime Achievement Award recipient, Dan Dailey, Chef Merges’ menu will certainly intrigue and delight you. Surprises will abound during the evening.
Matthias Merges got into the industry early on, getting his first restaurant job at 14, and eventually graduating from the Culinary Institute of America. After graduation, Merges headed for Chicago, where he honed his skills at restaurants like Carlos’, LaTour at the Park Hyatt, Gabriel’s, and The 95th. After a hugely successful stint opening Metropolitan in Salt Lake City (with wife and the restaurant’s architect, Rachel Crowl), Merges headed back east to Charlie Trotter’s. Although he left the restaurant after two years, Merges returned in 1996 to run the kitchen, coordinate on cookbooks and television shows, and generally assume the “Director of Operations” mantle. In 2010, after over 14 years of service, Merges left Charlie Trotter’s to pursue his own dream: honoring American cuisine in all its diversity at a restaurant of his own at Yusho.
The Pre-Conference Reception is a fundraiser that supports low conference registration fees for student members of GAS. You must be registered in advance in order to attend. Shuttles begin leaving the Palmer House at 5:30. We expect a sold out evening,so be sure to register early.
